How to make Pancakes Kenyan Style

I love pancakes; I can eat them every morning. They remind me of my mama so much. Growing up, my mum would wake up early every Saturday morning to make us lots of pancakes. I think it was a way to bribe us into cleaning the house thoroughly. Because after that heavy breakfast,  we would get down to cleaning every corner of the house and compound. 

I have now passed on the tradition to my own family, although I cook them any day. And my eldest daughter loves them so much.

Since sharing is caring, here goes my Mama’s pancake recipe

Ingredients

Flour (Ajab flour is my best)

2 eggs

1 cup milk

1 cup water

Cooking oil

Pinch of salt

1 tablespoon sugar

Baking powder (if you want them fluffy)

Procedure

  1. In a clean large bowl sieve the flour. If you can get the metal sieve for sieving flour and juices the better
  2. Add the sugar to the four; you can add any amount of sugar depending on your taste.
  3. Add a pinch of salt. If you like them fluffy pancakes, add a teaspoon of baking powder for every 2 cups of flour. I like mine flat so I don’t add. Mix all the dry ingredients
  4. In a separate bowl, break the 2 eggs.
  5. Add a tablespoon of oil to the mixture
  6. Add a cup of milk
  7. Whisk the wet mixture and fold into the dry ingredients. Add water and whisk to your desired consistency. I like mine almost very light. Make sure there are no lumps
  8. Heat your pan and put oil into the pan, scoop a mixture and drop into the pan. Shape your pancake to a round shape and let it cook for about 3minutes or until its golden brown. Flip the pancake for the other side to cook and serve on a clean plate. Put oil every time to flip. Cook them all in the same manner till your mixture is over
  9. Serve your pancakes with hot spicy tea, coffee, hot chocolate or any stew of your choice.

Tips

  • I shape my pancakes by tilting the pan in a circular motion. The mixture just spreads to fit the pan. My pancakes then come out the same size.
  • To achieve the same thickness, use a scooping spoon and fill to the same level for each.
  • You can flavor your pancakes with a ripe banana, cardamom, cinnamon, vanilla essence or grated lemon rind
  • You can also make your pancakes with rice flour, oats or brown Atta flour.
  • For those who don’t take eggs or milk. You can choose not to add either.
